Cake: The Veganing

Hi there.

Not to alarm you, friends, but there may be more than one best cake recipe ever. It is unclear if this needs multiple time lines or dimensions, but it has happened.

Some of you may have joined in marveling at I Am Baker’s  she has a new site recipe that we turned into a cake person!

And now! Rivalry! Vegan chocolate cake. Its totally healthier, right? It has no butter!

The recipe is a family secret was kindly shared by a workmate:

In 1 big bowl put 2 + 2/3 cups flour, 6 big tablespoons cocoa, 2 teaspoons baking soda, 2 teaspoons baking powder and 1 + 1/3 cup of sugar. Mix up. In another bowl beat together 2/3 cup oil (like olive), 2 Tablespoons white vinegar, 1 teaspoon of vanilla and 2 cups cold water. Gradually add this to the dry mix. Bake in quite a big tin at 180degrees for approx 30 mins.

So easy so impressive. Its light a fluffy and dark and amazing. Do try it!

  1. Simple recipes can be as much fun as complex ones. Recently I made a 4 ingredient gluten free chocolate cake.
    250g dark chocolate
    250g butter
    1 cup sugar
    7 eggs
    (mix in varying ways and fold together in specific ways)
    Then bake for umpteen seconds.
    And VIOLA!!

    CAKE!

    (show me where yer noms at!)

    • My word that is a lot of eggs! What do the eggs do in the mix? You reckon you could replace them with… something else? They would make it fluffy and light, maybe? So does baking powder (maybe). Anyway. Sounds delish!
